Vegetarian tortilla soup (without the tortillas)

Ingredients

    2 19 0z. can green enchilada sauce
    3 cups water
    1 tsp. garlic powder
    .5 tsp. chili powder
    2 cup frozen corn
    2 15 oz. can chili ready tomatoes
    4 cups cooked pinto beans (from dry, if you use canned adjust sodium levels)

Tips

can be served with torn tortilla strips mixed into soup, will change nutritional value. serving suggestions (please adjust nutritional value accordingly): 1 tbsp. shredded cheddar, crushed salt-free tortilla chips, dollop low fat sour cream or plain yogurt.


Directions

put enchilada sauce and water into a large pot and bring to a boil. add spices and stir to mix. add corn, beans and tomatoes and return to a boil. reduce heat to a simmer and cook for 30 or so minutes, stirring occasionally.

Serving Size: makes 10 1 -cup servings
