Quinoa, 1 cup cooked
Garlic, 1 tsp fresh or from a jar
Olive Oil, 1/4 cup
Lemon Juice from one large lemon
Chopped Parsley, 1 cup fresh
Red Onion, 1/4 C chopped
Lite Salt, 1/2 tsp
2-3 Roma tomatoes, chopped
Red bell pepper, chopped, 1/8 C
Pepper to taste
I like to add a bit of crumbled feta cheese to the mixture just before serving.
Serve on lettuce roll up or grape leaf or as a side salad or dip.
Serving Size: Makes 8 1/2 C servings or use as a dip or wrap in tortilla
