Broccoli Cashew Salad

Introduction

Not a low-calorie salad, but this makes a very satisfying lunch all by itself. Not a low-calorie salad, but this makes a very satisfying lunch all by itself.

Ingredients

    1 cup chopped broccoli
    1.25 oz chopped cashews
    1 oz golden raisins
    1 Tbls. Mayonnaise
    1 Tbls. olive oil
    1 Tbls. balsamic vinegar

Tips

Any dried fruit can be substituted for the raisins. Flavored vinegars and oils can also be subbed for the balsamic and olive oil.


Directions

Combine ingredients at least one hour before serving. Refrigerate if making more than an hour ahead.
