Tex Mex Black Bean Burgers

Ingredients

    2 Tbsp Flax seed meal
    3 Tbsp warm water
    2 cups black beans, cooked and drained
    1 1/4 cups quick oats
    1/2 small onion
    1/4 chopped mushrooms
    1 carrot grated
    2 Tbsp Nutritional yeast (not brewers yeast)
    1/4 cup vegetable broth
    2 cloves fresh minced garlic
    1 Tbsp cumin
    1 tsp onion powder
    2 tsp garlic powder
    1 tbsb chili powder
    1/4 tsp cayenne pepper
    1 tbsp dried cilantro

Directions

Preheat oven to 350

Mix flax seed meal with 3 tbsp warm water and set aside.

Cover a baking sheet with parchment pater

Put beans and food processor and process until all beans are mashed.

Chop onion and mushroom, and peel and grate carrot.

Combine mashed beans, vegetables, quick oats, nutritional yeast, broth, flax seed meal mixture, and spices in a mixing bowl. Mash with hands until well mixed.

Form into six equal sized patties on the parchment paper, put in oven and bake at 350 for 30 minutes, flip half way through cooking time.

Serve on buns with tomatoes, avocado, peppers, and whatever condiments you desire, I like salsa and guacamole for these.

Note: these can be cooked on a BBQ grill also.
