Crock Pot Garlic Lime Chicken

Introduction

Number of Servings: 4

Ingredients

    4 chicken breasts (i use frozen)
    juice from 2 limes
    2 garlic cloves, minced
    1 1/2 cups low sodium chicken broth
    2 tablespoons light margarine spread
    1 cup uncooked instant rice
    1/2 tsp. black pepper
    1/2 tbsp dried thyme if desired

Directions

Place chicken breasts in crock pot
Squeeze juice from 2 limes (approx 1/4 cup) and drizzle over chicken
Mince the garlic and add to crock pot
Pour chicken broth in
Add butter, black pepper, and if desired, 1/2 tbsp dried thyme
Cover and cook on low heat 8-10 hours
Add rice and cook additional 15 minutes

Serve chicken over rice. A side salad complements well!

    I used instant brown rice and I added chili powder and cumin to it. Also when I added the instant rice I added a bag of frozen broccoli. YUM! - 11/20/09

  • Extremely bland. I even added extra garlic and extra lime plus lime zest. I'm not sure what could be done to make this taste better. Also, I ended up with a lot more liquid than I expected. I had to use a slotted spoon to get the rice out. Bummed...it sounded great. - 1/19/12

  • Great. We love garlic, so I will add more garlic next time. Also I'd like to try it with some zest in there to add more zing. We also used brown rice, as I was out of white rice. - 7/29/11
