Egg Muffins

Ingredients

3 cups Egg Beaters
1 Green Bell Pepper, diced
1 Red Bell Pepper, diced
1 Yellow Onion, diced
1/4 cup Green Onions, chopped
2 TB Olive Oil
1 TB Garlic Powder
1 TB Black Pepper

Directions
Saute green peppers, red peppers & onion in 2 TB of olive oil. Add garlic powder & pepper.
Preheat oven to 350 F. Spray muffin tin with non-stick spray or use silicone muffin pan. Spoon saute mixture into the bottom of muffin cups. Fill each muffin cup with egg beaters. Evenly divide cheese & green onions in each muffin cup.
Bake at 350 for about 25-35 minutes. When the muffins are done, loosen them with a knife before taking them out of the muffin pan. Remove from muffin pan and let cool for about 20 minutes on wire rake before transferring into the refrigerator or freezer.
Serving Size: Makes 12 Egg Muffins
