Pan Roasted Brussel Sprouts with Onion

I love to cook up a big batch of these in my cast iron skillet for lunch, but my family hates the smell when I make them. I love to cook up a big batch of these in my cast iron skillet for lunch, but my family hates the smell when I make them.
Number of Servings: 2

Ingredients

    .5 T garlic grapeseed oil
    150 g yellow onion, sliced
    540 g fresh brussel sprouts (after trimming ends

Tips

Top with a sprinkle of paresan cheese or Penzey's Sicilian salad seasoning. Yum!

Directions

Add onions to preheated sprayed skillet and sprinkle with salt. Saute onions until softened and slightly browned. Remove from pan. Cook brussel sprouts in two batches to avoid overcrowding. Place half the oil in the skillet and spread it over the surface. Place brussel sprouts cut side down, cover and cook a few minutes until browned on the bottom and slightly softened. Don't overcook! Remove from pan and cook the rest of the sprouts. Add all the vegetables back to the pan, add broth and cook for just another minute or so.

Serving Size: Makes 2 meal sized servings
