Blended Vegetable Soup

Introduction

This soup is an alternative to the chunky vegetable soup most of us are used to eating, although different--still, just as tasty. This soup is an alternative to the chunky vegetable soup most of us are used to eating, although different--still, just as tasty.
Number of Servings: 12

Ingredients

    1 package (10 oz) frozen spinach
    1 acorn squash
    4 medium carrots
    2-1/2 cups chopped celery
    1 cup vegetable broth

Directions

In a big pan put all ingredients except spinach and cover with water.
Let it boil until all ingredients are cooked.
Add spinach until it's no longer frozen.
Let it cool down, and then put it in the blender.
After everything has been blended, heat again.
Add salt if necessary.
You can modify the ingredients list to suit your taste and needs.
