Creamy Chicken Ranch TacosSubmitted by: LEIGHWOMAN
1 lb chicken, cooked and cubed
1 oz. taco seasoning (cumin, chili powder, garlic powder, any other mix of seasoning you see fit)
about 6-8 tbsp light ranch dressing
8 Mama Lupe's low carb tortillas
1/4 c shredded sharp cheddar
I used pre-cooked chicken and the entire meal took about 10 minutes to prepare. Penzey's Arizona Dreaming and Mural of Flavor work awesomely for this meal in addition to cumin and chili powder.
Allow chicken to warm through. Add dry taco seasoning. DO NOT add water or any other liquid.
Allow the seasoning to heat through, about 7-9 min.
Add ranch dressing. Mix, and allow again to heat through, about 5 min.
Spoon a couple of tbsp of meat into each of the warmed tortillas. Top with cheese and lettuce. Wrap, and eat!
