Banana & Chocolate Chip Muffins

Introduction

These muffins are really high in protein and low in fat. Unlike other low fat muffins, they taste like full fat muffins and aren't rubbery. (as long as you don't over mix the batter) This recipe is also very versatile. These muffins are really high in protein and low in fat. Ingredients

    1.5 cups Whole Wheat Flour
    1/4 cup Flax Seed
    2 Tbsps Chia Seeds
    1 cup Quick Oats
    1 Tbsp Baking Powder
    1 tsp Baking Soda
    2 scoops Vanilla Creme Protein Powder (1 scoop=35 grams)
    1 tsp Salt

    5 x-small ripe Bananas

    1 tsp Vanilla Extract
    2/3 cup Unsweetened Applesauce
    2/3 cup 1% Milk
    1 lg Egg (beaten)

    1/2 cup Brown Sugar (not packed)
    1/2 cup Chocolate Chips

Directions

Pre-heat oven to 400 degrees
Spray a 12 cup muffin tin with cooking spray.

In a large bowl combine the first 8 ingredients.

In a smaller bowl mash the bananas then add the next 4 ingredients to the bananas, mix well. Then add the brown sugar to the wet ingredients and stir.

Add the wet ingredients to the dry ingredients and mix just until combined. **** don't over mix or the muffins will turn out rubbery. When combined add chocolate chips and stir once or twice. Again, don't over mix.

Fill the muffin tin with the batter. It will be over the top of the cup.

Bake for approx. 20 mins. or until a toothpick inserted in center of muffin comes out clean.

Serving Size: Makes 12 large muffins.
