Corn Tortilla Breakfast

Introduction

A quick and easy recipe for a low calorie, but filling, start to your day. A quick and easy recipe for a low calorie, but filling, start to your day.

Ingredients

    1 large egg
    2 TBL On The border salsa Con Queso
    2 Mission Yellow corn Tortilla's Extra Thin
    I Can't Believe It's not Butter Spray or your favorite pan spray.

Tips

If you prefer you can use 2 pans. I have a large flat frying pan so there is plenty of room to cook both without the egg running into the tortillas while cooking.


Directions

put egg and Con Queso in blender (I use a Ninja) Blend together. Spray pan and put 2 tortillas on the pan and heat. (I use med heat) after 2 min turn the tortillas over and put the egg mixture in the pan next to the tortillas. Flip the egg and divide in half. Take the tortillas out of the pan and put one half of the egg on each tortilla and fold in half. Enjoy.


Serving Size: 1 serving (2 breakfast tacos)
