Ingredients

    2 oz skim mozzarella cut into three thick slices
    3 thick slices of heirloom tomato
    1 tbsp oil oil
    5 fresh basil leaves

Directions

Cut three thick slices of heirloom tomato, lay on plate. Using a cheese slicer, cut three slices of part-skim mozzarella cheese, lay on top of tomato. Take basil leaves and lay on top of cheese. Drizzle with 1 tbsp of virgin olive oil.

It's a little higher in fat, but it's the "good fat" and if you make this a meal (the tomatoes and the protein from the cheese are very filling), then you've had a great meal for under 300 calories!
