Tofu un-fried rice

Introduction

This is a very vegy-loaded fried rice. This is a very vegy-loaded fried rice.
Number of Servings: 8

Ingredients

    Brown Rice, long grain, 2 cup, cooked and cooled
    Tofu, firm, 2 cup, diced
    Mushrooms, fresh, .5 cup, diced
    Peas, frozen, 0.5 cup
    Bok Choy, raw-shreaded, 0.5 cup
    Scallions, raw, .25 cup, chopped
    *Kikkoman Lite Soy Sauce, 2 tbsp
    Water chestnuts, 0.5 cup slices
    Onions, raw, .5 cup, chopped
    *Chili Oil, 1 tsp
    *Canola Oil, 1 tbsp + 1 tsp
    Carrots, raw, .5 cup, chopped
    *Edamame, Shelled, Frozen, 0.5 cup

Tips

I also like to add a little pepper and ginger to spice it up a bit. My husband adds sriracha sauce to his near the end of the cooking time and fries it up for a little longer, to make it extra spicy.


Directions

Cook rice and cool. I put in the rice cooker beforehand and store in fridge.

In a large skillet, heat 1 tsp canola oil. Add diced tofu and saute until slightly browned. Set tofu aside.

In large skillet, heat 1 tbsp canola oil and 1 tsp chili oil. (Or add red pepper flakes to canola oil). Saute onions and carrots until onions start to turn transparent. Add remining vegetables, tofu, and rice, and 2 tbsp lite/low sodium soy sauce, and heat through until vegetables are desired consistency.
