Chocolate Chip Peanut Butter Craisin Oat Cookies

Ingredients

    *Bob's Red Mill - Gluten Free All Purpose Baking Flour, 1.5 cup
    Baking Soda, 1 tsp
    *Kosher Salt, 1 tsp
    Applesauce, unsweetened, 1 cup
    Brown Sugar, .75 cup, packed
    Granulated Sugar, .75 cup
    Egg, fresh, 2 large
    Vanilla Extract, 1 tsp
    Peanut Butter, smooth style, .5 cup
    Oats, 2.5 cup
    Cranberries, dried, sweetened, 1.5 cup(remove)
    Semisweet chocolate, 1 cup chips (dark chocolate for dairy free)

Tips

Because of the applesauce, these come out very cake like. If you are okay with dairy, use 2 sticks of butter in place of the applesauce.


Directions

Whisk together flour, baking soda and salt
Cream together applesauce and sugars
Add eggs, vanilla and peanut butter, beat until combined
Add flour mixture to wet batter, beat until combined
Add oats, craisins and chocolate chips, beat until combined

Drop by teaspoons onto cookie sheets, 2 inches apart.
Bake at 375 for 12 minutes
