Vegetable LoMein

Ingredients

    1 Tbs oil
    1 cup snow peas
    1 bell pepper
    2 stalks celery
    2 carrots
    4 scallions
    bok choy
    1 can water chestnuts drained
    2 inches fresh gingerroot (minced or grated)
    4 garlic cloves, minced
    8 oz. thin spaghetti, cooked al dente and drained well
    1/3 cup soy sauce
    1 tsp toasted sesame oil

Directions

Prep veggies before starting to cook: Cut snow peas in half on the diagonal. Remove seeds from bell pepper and slice into thin strips. Cut celery, carrots and scallions thinly on the diagonal. Slice boy choy into thin strips.
Cook the spaghetti. In the meantime, heat a wok-shaped skillet or large non-stick skillet over high heat.
When pan is very hot, add oil, (it will smoke a bit) then, immediately add the snow peas, pepper, celery, carrots, and scallions. Stir fry for 4-5 minutes or until carrots and celery begin to cook. Add boy choy, sprouts, ginger and garlic, and stir-fry 2 more minutes. Add the cooked noodles and toss with to combine. Add the soy sauce and toss to coat evenly with sauce.
Transfer the lo mein to a serving platter and garnish with a drizzle of toasted sesame oil.
