Ingredients

    *1 14 oz can diced tomato, low sodium
    *1 14 oz can vegetable broth, low sodium
    *1 14 oz can hominy
    *1/2 large onion, diced
    *Salt
    *Pepper
    *Cayenne
    *Chili Powder
    *Cooking Spray
    *1/2 lime, cut into wedges

Directions

In medium sized sauce pan, add a little cooking spray, onions, salt, pepper, cayenne, and chili powder. Cook until browned. Don't stir too much, let the spices burn a bit to get some flavor from the chili powder.

After about 10 minutes, add broth and tomatoes to hot pan and scrape the bottom of the sauce pan to get the charred bits up. Bring to a boil.

Add hominy and reduce heat. Let simmer for about 30 minutes (though the longer the better).

Upon serving, squeeze a lime wedge into soup. Enjoy!
