Mexican Chicken Soup

Number of Servings: 4

Ingredients

    1 tbs Canola oil
    1 sm onion diced
    1 jalapeno pepper diced
    2 tsp ground cumin
    5 cups kitchen basic un-salted chicken stock
    1 1/2 lbs of diced cooked chicken breast
    2 cups of fresh salsa

Directions

Heat oil in large saucepan over medium heat. Add onion and Jalapeno; cook, stirring often until vegetables are tender. (5 mins). Stir in garlic and cumin and stir for 30 seconds more. Add broth and increase heat to high and bring to a rapid simmer. Add chicken and cook until no longer pink. (about 3 mins). Stir in salsa and bring back to a simmer. Season with salt and pepper to taste if desired. Serve hot.

Serving Size: Makes 4 2 1/2 cup servings
