Introduction

A simple and fast meal for lunch or dinner. It can be adjusted to taste depending on how spicy you want it. A simple and fast meal for lunch or dinner. It can be adjusted to taste depending on how spicy you want it.

Ingredients

    2 Cans of Mexican Stewed Tomatoes
    2 Cans of Red Kidney Beans
    1/2 Onion
    3 - 4 Boneless Skinless Chicken Tenders/Strips
    2 tsp. Chili Powder

Tips

This chili can be adjusted to taste depending on how spicy you want it. It also can be kept in the frig. for several days. (4 serving = 2 cups; 8 servings = 1 cup)
*You can also add 1 Can Tomato Paste if you want it thicker.


Directions

Cut chicken stips into smaller chunks and brown with onion in a pot. Add cans of kidney beans and stewed tomatoes. Then add chili powder and simmer on low to medium heat. Taste after 20 minutes to see if you need it spicier. (This recipe can also be done in a slow cooker on low for 6 - 8 hours).
