Veggiful Brown Rice

Ingredients

    minute rice, onions, peppers, carrot, salt and pepper and olive oil

Directions

sautee the onions and peppers (sprinkle w/ salt and pepper) in the olive oil until tender then add the shredded carrots and keep on low while the rice is cooking.
I used boil in a bag brown rice but any cooked rice will mix well w/ the veggies.
When the rice is about done add the cranberries to the warm veggie mix.
Dump finished rice (after draining the boil bag) into your pan w/ the cooked veggies and stir to mix.
Serve :)
