Vegan brussel sprouts

Introduction

This is such a good recipe - it makes a delicious side or a filling meal. This is such a good recipe - it makes a delicious side or a filling meal.
Number of Servings: 1

Ingredients

    Brussel sprouts - 1 pound
    1 onion
    3t garlic
    1 cup mushrooms
    3/4 c. vegetable broth
    salt & pepper, to taste

Directions

Add onions to skillet and cook a few minutes (add salt to speed browning). Add 2-3 T broth and continue cooking 2-3 minutes. Add garlic & cook another minute. Remove onion mix from skillet.

Arrange brussel sprouts in skillet (cut off end and cut each sprout in half) with cut side down. Cook over medium heat until brussel sprouts begin browning. Add mushrooms, stir, and cook another 3-4 minutes. Add 1/2 cup of broth & onion mixture. Cover and cook until sprouts are easily pierced with a fork.

Serving Size: Makes 2 generous servings
