    3 cups grated fresh zucchini
    1/3 applesauce
    1/3 oil
    1 1/3 cup sugar
    2 eggs, beaten
    2 teaspoons vanilla
    2 teaspoons baking soda
    Pinch salt
    2 1/2 cups all-purpose flour
    1/2 cup oatmeal
    2 teaspoons cinnamon
    1/2 teaspoon nutmeg


1. Preheat oven to 350 degrees

2. Grate zucchini, a medium zucchini is equal to 1 cup.

3. In mixer combine applesauce, oil, sugar, eggs, vanilla. Beat for 1 minute. Add zucchini and beat until fully mixed.

4. Add in ALL dry ingredients and then beat for 1 minute.

5. Spray muffin tray with no-stick spray.

6. Pour batter into muffin tray and bake for 30 minutes.

7. Let cool for 5 minutes in tray before removing to a cooling rack.
