Thai Green Zucchini Coconut Soup

Introduction

Ingredients

    5 Zucchini, halved and sliced into moons
    7-8 cups water
    2 Knorr vegetable bullion cubes
    1 inch fresh ginger, sliced thin
    1 inch fresh or 1 tsp chopped lemon grass
    Thai fish sauce - a few splashed (optional - caution - salty!))
    7 oz creamed (pulverized) unsweetened coconut
    1-2 tsp Thai Green Curry
    1-2 Jalepeno or serrano peppers (optional)

Directions

boil zucchini, ginger, bullion in water until soft. Turn off heat, add rest of ingredients, whir with hand blender till smooth.

Serving Size: 6 12 oz servings (1 coffee mug's worth)
