vegi stuffed peppers

Ingredients

    6-8 whole peppers
    1 Spagetti squash
    4 oz chopped mushrooms
    1 can diced tomatos I used garlic and oregano
    1 6oz can on tomato paste.
    4 oz cheese mozzarella.

Directions

I cook squash in oven if you do this the night before prep time is cut in half. mix squash and all other ingredients together and spoon in peppers , 1 tbl spoon of cheese on each one and bake

Serving Size: 6-8 depending on size of peppers
