Introduction

Ingredients

    1/2 cup Simply Dressed® Caesar Salad Dressing
    Salt & freshly ground black pepper, to taste
    1 bunch fresh asparagus, ends trimmed
    2 tbsp olive oil
    2 hard boiled eggs, peeled & chopped
    Zest of 1 lemon
    1/4 cup Parmesan cheese shavings
    8 radishes, cut into matchsticks

Directions

1. Prepare a grill to medium-high heat or preheat an oven to 400 degrees F.
2. Toss asparagus with olive oil and season with salt and pepper.
3. Grill asparagus 2 to 4 minutes, turning spears frequently, until the spears are bright green and lightly charred. If roasting, arrange spears on a sheet pan, place on top rack of oven and roast for 4 to 5 minutes (shake pan once or twice during cooking time).
4. Transfer asparagus on a platter, drizzle with Simply Dressed® Caesar Salad Dressing, sprinkle with eggs, lemon zest, cheese and radishes. Serve.

    One thing I knew before I met SP, how to "jiggle" a recipe. One thing I learned from SP, portion control.
    Halve the cheese and dressing, reduce oil to 1 tsp, double the asparagus.
    Now you have 143.6 cal, 10.9 fat/2.1 sat, 5.8 carb/.7 sug, 6.8 prot, 240 sod.

    A nice twist on asparagus, this is delicious. The radishes add a nice bit of color, but I will probably leave them out next time around. - 3/20/12

  • I made it without the egg but with the addition of sliced red peppers and black olive slices...so good. An entire large bowl disappeared at a recent pot luck.. even people who didn't like asparagus raved. - 5/8/12

  • I will make this salad,but limit the amount of dressing I use. I usually stick to olive oil and lemon. With the cheese it already has the flavor of a caesar dressing. Any dressing I mix up will be less calories than a commercial one.
