Ingredients

    3/4 cup Simply Dressed® Balsamic Salad Dressing
    4 large or 6 medium heirloom tomatoes, sliced
    12 slices fresh mozzarella
    1/2 sweet onion, cut into thin slices
    1 cup fresh corn kernels, cooked
    1 tbsp chopped chives
    1 tbsp chopped parsley
    12 fresh basil leaves, divided
    Salt and pepper to taste

Directions

1. Arrange tomatoes, cheese and onions on a platter or individual plates.
2. Season with salt and pepper and drizzle with Simply Dressed® Balsamic Salad Dressing.
3. Sprinkle top of salad with corn, chives, parsley and torn basil leaves.
4. Garnish with a few whole basil leaves. Serve.

    Drowning a fresh, ripe, heirloom tomato in a thick salad dressing has got to be a violation of the Geneva convention! I'll skip the dressing (and corn) and use just a drizzle of high-quality olive oil and balsamic vinegar. THAT is how you dress a tomato! - 4/27/12

    this is a variant of a classic Italian salad (which is delicious) this adds onion and some corn to it. I would dress it like the Italians, with olve oil and lots of basil (thats already in this salad) and leave it at that. - 4/27/12

    Remember there's hardly anything that is a "bad" food, it just depends on the entire balance of the day's nutrition and portion sizes for lasting healthy changes in our body and thinking. Some fats are good fats and we need a little each day for our health and to help us feel full. - 4/27/12

  • I love a "Caprese " salad of tomatoes, mozzarella, and basil, drizzled with EVO. Fresh cracked pepper and a little sea salt.
    No need for the corn, and heavy fattening salad dressing.
    If I add anything else it will be balsamic vinegar. - 4/27/12

  • People - Have you ever had fresh mozzarella, combined with tomatoes? It ENHANCES the flavor of wonderful fresh heirlooms. The mozzarella makes it an entire meal. Really, you don't need to be so negative about this recipe. If you don't like it, move on to another recipe. - 4/27/12

  • I did not see the calories for this recipe but I would leave off the salad dressing, corn and cheese and use the fresh tomatoes and onions with black pepper and a little salt. I love garden fresh tomatos and this would decrease the calories from the dressing, cheese and the corn and is still good. - 4/9/12
