Ingredients

    1/2 cup water
    1/2 cup chopped onion
    1 clove garlic, minced
    1 cup chopped tomato
    1/4 tsp paprika
    1/4 tsp dried oregano
    1/8 tsp freshly ground pepper
    Dash Tabasco
    1 cup cooked garbanzo beans, drained and rinsed
    1/2 cup chopped winter squash
    one 6-ounce can spicy tomato juice
    1 cup fresh spinach, washed and chopped

Directions

Place the water, onion, and garlic in a large pot. Cook, stirring occasionally, until the onion is softened slightly, about 5 minutes.
Add the tomato and seasonings. Cook for 5 more minutes. Add the garbanzo beans, squash, and tomato juice.
Cover and cook for 30 minutes. Stir in the spinach and cook until softened, 2 to 3 minutes.

Serving Size: 4 2-cup servings
