GF Macaroni and Cheese

Introduction

Ingredients

    Preheat oven to 375 degrees.

    In large pot, boil noodles, drain.

    In another saucepan, melt butter and "flour" together to make a roux, cook for 3-4 minutes until golden. Add almond milk, mustard powder, bay leaf, salt, pepper. Cook until thickened stirring with a whisk often. In a small bowl, scramble the egg. Temper it with some of the sauce and add back to pan. Add 2 cups cheddar cheese stirring to melt.

    Mix sauce together with noodles, top with gluten free "breadcrumbs" premixed with Parmesan cheese.
    Bake for 30 minutes or until golden and bubbly.

Tips

Boil noodles for about 1/2 the time directed on package - they will continue to cook in oven.
