LHM Breakfast Quinoa

Introduction

Great way to start the day; similar to oatmeal, but without the gluten and it keeps me full all morning! Great way to start the day; similar to oatmeal, but without the gluten and it keeps me full all morning!
Number of Servings: 6

Ingredients

    2 cups Soy Milk
    1 cup Quinoa, rinsed
    1/2 cup Craisins
    1 Tbsp Cinnamon

Tips

Easy to reheat in the microwave, add a bit of milk to loosen up. Also try with fresh berries, just add at the end of cooking instead. Extra tasty with flax, nutbutters, cut-up fruit and extra milk added!


Directions

Bring 2 cups of milk to a gentle boil. Add quinoa and cook for 15 minutes (much like cooking rice). At 15 minutes, most of the milk will be soaked up, but not all. Add the Crainsins and cinnamon and stir to combine. Cook for another 7 minutes. Refrigerate and eat in 1/2 cup portions with your favorite additions.
