Quinoa and Lentil Soup

Ingredients

    3 quarts water
    2 cups vegetable broth
    1 cup quinoa
    2 cups lentils
    1 small onion, chopped
    5 medium carrots, chopped
    1 cup frozen yellow sweet corn
    3 cups collard greens, chopped
    4 Tbsp nutritional yeast
    1 Tbsp Curry powder
    1 Tbsp Garlic powder
    1 Tbsp Onion Powder
    1 1/4 Tbsp salt (feel free to reduce if you wish)

Directions

Combine everything in large pan, bring to fast boil, reduce heat to med-low, cover and simmer for 30 minutes or until done.
