6 Tbsp softened butter
5 Tbsp sugar
1.5 cup flour
1.5 tsp baking powder
2 Tbsp milk
1 can 20 oz crushed pineapple
2 8oz packages fat free cream cheese
2/3 cup sugar
2 Tbsp flour
5 eggs separated
2 Tbsp lemon juice
2 Tsp vanilla
Pat into bottom & up the sides of a 9x13 pan. Place drained pineapple over crust. Reserve juice.
Beat cream cheese, sugar & flour. Add egg yolks, lemon juice, & vanilla; mix well. Add enough milk to pineapple to measure 2 cups. Stir milk into cream cheese mixture until combined.
Beat egg whites until stiff. Fold filling mixture into egg whites. Pour into crust. Sprinkle with cinnamon.
Bake at 325 for 55 minutes. Cool on a wire rack. Chill until served.
