Sweet, tangy, Non-fat cookie/muffin Sweet, tangy, Non-fat cookie/muffin

Ingredients

    1 c. persimmon pulp (about 3 persimmons)
    1 c. white sugar
    1 egg
    2 c. WW flour
    1/2 t. salt
    1 t. cinammon
    1/2 t. ground cloves
    1/2 t. nutmeg
    1 t. baking soda
    1 c. raisens

Directions

Use a cookie scoup for uniformity. Bake for 15-18 minutes @ 350.

  • These are great - Since I don't eat eggs I replaced the egg with ener-g egg replacer and they came out great...I didn't have raisens so I used chocolate chips (yes not as healthy but I figure without the egg it almost evens out :) - 3/12/08
