Time Saving Jambalaya

Submitted by: RAYELLE1114

Introduction

I make a huge pot, put some in a container to eat throughout the week, and put the rest in the freezer. Then I thaw it out as I need more. A huge timesaver so I can spend my nights studying instead of cooking. Also, use what you feel. I just threw stuff in and it turned out well. Number of Servings: 15

Ingredients

    Brown Rice
Raw fish, cut into pieces (I used tilapa b/c it was on sale)
    Turkey sausage
    Raw shrimp, peeled
    Celery
    tomato paste
    can tomatoes
    chicken broth
    chicken bouillon
    frozen okra
    frozen french green beans
    creole seasoning
    hot sauce
    minced garlic
    onion, diced

Tips

I used low sodium chicken broth. Also, I didnít really measure anything. I clicked the options available w/ the ingredients, but I used a whole onion, and a 1-pound bag of okra, and 1 lb of green beans. My fish fell apart, which is why I put it last. I served this with cornbread. If you have any ideas to improve it let me know!

Directions

Add onion and garlic to pot (w/ oil, etc. I used safflower). Cook 1 min then add chopped celery, tomatoes, tomato paste, and stir for about 1 min more. Add chicken broth, water, and rice. Bring to a boil, then simmer until rice is cooked. Cook turkey sausage in separate pan and add to pot, add vegetables and shrimp and let cook until the shrimp is halfway done. Add Seasonings, stir. Add fish then cover until fish is cooked.

Serving Size:†1-1.5 cups
