Fried Chicken in Coconut Oil

Introduction

For those times when you really crave fried chicken. Tastes more like its cooked in corn meal, but very tasty. For those times when you really crave fried chicken. Tastes more like its cooked in corn meal, but very tasty.
Number of Servings: 4

Ingredients

    1/2 cup brown rice flour
    1 tsp sea salt
    1 tsp paprika
    1/2 tsp pepper
    20 ounces of uncooked chicken, washed and cut to size
    Coconut Oil

Tips

I cut two 10 ounce breasts halves in half prior to rolling in the flour mixture, so the 4 portions are already prepared.


Directions

Mix the flour, salt, paprika, and pepper is a bowl large enough for dipping the chicken. Rinse the chicken in water and while still wet, roll all sides in the mixture. Cook for 20 minutes, turning every 5 minutes with tongs.

Serving Size: Makes 4 5-ounce servings
