Ingredients

    Eggplant, fresh, 5 cup, cubes (remove)
    Onions, raw, .5 cup, chopped (remove)
    Garlic, 2 tsp (remove)
    *Canned diced tomato, no salt added, 1.75 cup (remove)
    *Canned diced tomato, no salt added, 1.75 cup (remove)
    Basil, 2 tbsp (remove)
    Cauliflower, raw, 2 cup (remove)
    Egg, fresh, 1 large (remove)
    Cottage Cheese, 2% Milkfat, 2 cup (not packed) (remove)
    *85% Lean Ground Beef Cooked, 10.5 oz (remove)
    seasonings, light salt , pepper, onion powder,

Directions

roast onion, egg plant for 30 minutes with best life spread, in the meantime cook ground beef, drain completely, add 1/2 garlic and 1/3 basil, set aside, make "mock" white sauce:

cook cauliflower with 1 boulion cup and 1 cup water, when soft, season with onion powder, light salt and pepper, add fat free cream cheese, cottage cheese, take off burner, and whirl until smooth, add the egg, whirl some more, reheat while constantly stirring. add canned tomaoto to the roasted eggplant, and basil, and garlic, season as desired, top with ground beef, pour mock white sauce over and bake at 350 for 30 minutes
