Ingredients

    1 large head cauliflower
    Vegetable broth
    1 onion; chopped
    1 stalk celery; chopped
    salt and pepper

Directions

Cut cauliflower into large pieces and place in large pot. Add onion and celery. Cover with vegetable broth and bring to a boil. Simmer 15-20 minutes until soft. Cool 15 minutes. In batches, put into blender and puree with enough broth to desired consistency.
