Introduction

Ingredients

    herbs: basil, chili powder, onion salt, parsley

    prepare 0.25 inch thick slices from chef's potato.

    prepare paper thin zucchini slices.

    Veggie brand mozzarella soy cheese shreds

Tips

I bake my potato slices on a rack so hot air browns tops and bottoms.


Directions

Mix tomato sauce, canola oil and spices, set aside.
Slice large Chef's potatos. Bake in 400 degree F oven until no longer moist.
Remove from oven, brush with tomato sauce.
arrange thin zucchini slices on top potato slices.
brush again with tomato sauce.
top with mozzarella cheese shreds.

Bake at 400 degrees F until mozzarella browns.
Remove from oven, cool and serve as snack or side to main course.
