Ingredients

    1 cup quinoa
    1 1/2 cups unsweetened vanilla almond milk
    1/2 cup dates, pitted and chopped
    1/2 cup flax seed meal
    1/2 cup unsweetened applesauce
    1/4 cup unsweetened cocoa powder
    1/4 tsp salt
    1 tsp vanilla extract
    3/4 cup hazelnut meal, divided

Directions

Preheat oven to 350. Spray 8" square baking dish with nonstick spray.
Rinse quinoa with cold water then place in a pot. Add 2 cups water. Bring to a boil, reduce heat and simmer for 10-12 minutes or until cooked. Set aside.
In a blender, blend almond milk, dates, flax seed, applesauce, cocoa powder, and salt. Pour into a bowl and stir in cooked quinoa, vanilla extract, and 1/2 cup of hazelnut meal.
Spread mixture in pan and sprinkle remaining hazelnut meal on top. Bake for an hour to an hour 15 minutes or until set. Invert onto a plate and cut into 9 squares.
