Pasta with carmelized onions and chard

Introduction

Ingredients

    2 cups uncooked whole wheat pasta
    1 onion sliced finely and carmelized with 1 tbs. oil and 1 tsp sugar
    1 tbs. olive oil
    3 cloves garlic, chopped
    1/4 hot chili flakes
    4 cups chopped red swiss chard
    1 cup cherry tomatoes, halved
    salt & pepper to taste
    1/3 cup light sour cream
    1/4 cup parmesan cheese

Tips

Cooking time does not include time to carmelize onions.


Directions

Carmelize onion in 1 tbs. oil and 1 tsp. sugar. Remove from pan. Cook pasta in boiling water. Meanwhile, saute garlic on low in olive oil in same pan you carmelized onions. Add chili flakes and saute a few seconds more. Add chard. Continue to cook adding a bit of water if necessary. Add tomatoes, carmelized onion and incorporate well to distribute all ingredients. Add cooked drained pasta and sour cream. Add a bit of water if it seems too dry. Top with parmesan cheese.

Serving Size: Makes 5 generous portions
