Sun Dried Chicken Pasta

Introduction

This is something my mom used to make when I was a kid. Every once in a while she would throw in some zuchini or mushrooms. This is something my mom used to make when I was a kid. Every once in a while she would throw in some zuchini or mushrooms.
Number of Servings: 8

Ingredients

    1 lb. chicken, cubed
    1 cup sun dried tomatoes
    1 med. onion, chopped
    4 cloves Garlic chopped
    1 tsp Pepper
    1 tsp salt
    1 tsp red pepper flakes
    1 lb. Whole wheat pasta (penne or spiral works well)
    1/4 c. extra virgin olive oil
    Grated Parmesan cheese

Directions

1. Boil sundried tomatoes in water for 3 minutes. Drain and quarter.
2. Heat oil in large skillet over med-high heat. Chop and saute onions. Add chicken, salt, pepper, and red pepper flakes. Saute until chicken is almost done about 7 minutes.
3. Add tomatoes and cover. Cook for 5 more minutes.
4. Toss with cooked and drained pasta. Season with grated cheese.
