2 cups - Zucchini, sliced 1.5 cups - Corn, frozen or fresh .5 cup - onion, chopped 1 teasp. - black pepper .5 cup - tomatoes, chopped 2 oz - Mozzarella, park skim milk, shredded
Saute the sliced zucchini, corn and onion in a pan coated with cooking spray until tender but still crisp, about 10 minutes. Season with pepper. Add the chopped tomatoes and spoon vegetables into an ovenproof bowl and sprinkle with shredded Mozzarella cheese. Place in a preheated 300 degree oven for 10 minutes, or until cheese is melted.
