Number of Servings: 4

    1/2 c sour cream
    1 dash ground pepper
    1 tbsp ground tarragon
    1 1/2 tsp dijon mustard
    1 dash salt
1 tbsp butter or rendered chicken fat
1 lb boneless skinless chicken breast, in bite-size pieces
1 lb asparagus, trimmed and cut into bite-size pieces
    1 t garlic powder
    1 medium onion, finely diced
    1 c chicken broth

Season chicken with salt and pepper and saute in drippings over medium heat until golden brown, about 2 minutes on each side. Remove to a platter and keep warm.

Nuke the asparagus until tender-crisp (do not overcook!), about 2 minutes. Set aside.

Add onions to the skillet in which the chicken was cooked. Cook until translucent, about 5 minutes.

Add broth and garlic powder to the pan and reduce to about 1/3 cup. Whisk in mustard, tarragon and sour cream until smooth.

Add the chicken and asparagus to the sauce to reheat.

Serving Size: 4 servings
