Carrot Pulp Bread

Introduction

Not sure what to do with carrot pulp after juicing carrots...make a bread! Not sure what to do with carrot pulp after juicing carrots...make a bread!
Number of Servings: 12

Ingredients

    2/3 c olive oil
    1/3 c honey
    1/3 c Splenda
    2 eggs
    1 1/2 c carrot pulp (save after juicing carrots in juicer)
    1 1/2 whole wheat flour
    1 tsp cinnamon
    1 tsp baking soda

Directions

Mix oil and honey together, add eggs and stir. Stir in carrot pulp and mix by hand well. Finally, add the remaining ingredients, and mix well. Dough will be slightly thick. Pour the mixture into a loaf pan that has been greased or sprayed with a non-stick spray. Bake at 350 for 60 to 65 minutes.

Serving Size: makes 12 slices of bread loaf
