Easy Gumbo

Introduction

You won't believe how tasty this is! You won't believe how tasty this is!
Number of Servings: 4

Ingredients

    8 oz low fat smoked sausage
    8 oz diced chicken breast
    8 oz peeled shrimp
    1/2 cup green pepper, chopped
    1/2 cup onion, chopped
    1/2 cup celery, diced
    2 cups diced tomatoes, no salt added
    2 cups prepared brown rice
    2 cups low sodium chicken chicken broth
    1 tbsp garlic powder
    1/2 tsp cayenne pepper

Directions

Add peppers, onions, celery and tomatoes to pot.
Slice smoked sausage and add to pot.
Add chicken breast to pot.
Add prepared rice and chicken broth to pot.
Add seasonings.
Boil on med-hi for five minutes.
Reduce heat and cook on low for 25 minutes.
Add shrimp last three minutes of cooking.

    Many of us in the south make gumbo w/o okra. The secret of a good gumbo is a smoky roux, the flour and fat paste browned slowly over low heat. It can be done with olive oil and whole grain flour. I also use thyme and "shrimp boil"; & yes, we do use sausage and shrimp in the same pot! Pour over rice. - 3/4/08

    this isn't a gumbo....you have to make a roux!
    secondly...you would almost never put seafood in the same gumbo as chicken and sausage. You can make real "gumbo" healthy...but this is more like a heavily protein dense soup! I would have used water instead of chicken broth...if you have the roux - 3/11/08

    For those of you that make a roux with oil and flour. You can use whole wheat flour and bake it in the oven. - 3/9/08

    I loved this recipe!! My husband loves Gumbo but me now so much a fan but i absolutely loved this. I did leave out the shrimp for my bowl but otherwise I will make it again. I will add some okra next time! Delicious!!!! - 3/6/08

    I used MUCH less sausage and added a pack of frozen okra. This reduces the cholest/fat content and still gives the flavor. Its tasty! - 3/4/08

    if you leave out the shrimp it lowers the cholesterol and by using fat free reduced sodium broth or veggie broth it lowers sodium content and fat content. Can replace sausage with firm fish or smoked tofu if want to again lower fat and sodium... - 3/4/08

    I changed the chicken broth to the fat free kind to lower the calories and fat. Cal are now 303.5, and fat is 2.6g and fiber 4.8. Went from 7 pts to 5 pts per serving! - 3/4/08

  • I don't care what it's called...all I know is it was delicious! I actually used some leftover turkey instead of the chicken and only used half the cayenne just because we can't handle a lot of spice. I will make this again. - 12/29/11

    Gumbo is so good I grew up having it from the south and it was so good.The would put flour in the pan and almost burn it and add chick dripping from it also the polish ring ,and dried shrimps, chicken breast and man it was the best. - 3/9/08

    I have a good recipe to use Okra:

    "Corn and Okra Soup"
    1 can (14 1/2 ounces) Okra, drained
    1 can (8 ounces) whole-kernel corn, drained
    2 cups chicken broth
    1/2 cuo diced cooked chicken
    1 stalk celery, thinly sliced
    1 small onion, diced
    1 cup milk
    Salt & pepper - 3/6/08

    It's healthy but I could never eat a gumbo that has celery and tomatoes, besides the roux makes the gumbo and there isn't anything healthy about a roux! You shouldn't advertise this as gumbo, it's more a soup. - 3/4/08

    Sounds good, but a gumbo is usually made with okra as a thickener (the word "gumbo" derives from an African word for okra). This looks more like a jambalaya... - 3/4/08
