Number of Servings: 3

Ingredients

    1 1/2 cups cooked whole grain brown rice
    1 14-16 oz. can small red beans, rinsed and drained
    1 14-16 oz. can petite diced tomatoes with liquid
    1/2 tablespoon olive oil
    1 large onion, chopped
    1 large bell pepper (red, green, or yellow), chopped
    3 cloves garlic, crushed
    1 tablespoon oregano leaves
    1 medium avocado, peeled and sliced for garnish

Directions

Preheat large saucepan. Add olive oil, onion, pepper, and garlic and saute for about 5 min. Add remaining ingredients except avocado, stir well, cover and simmer for 15 minutes. Serve with avocado slices on the side. If you don't want to use the avocado, subtract 95 calories, 5 carbs, 9 fats, and 1 protein per serving.

Serving Size: Makes 3 approximately 2 cup servings
