Introduction

This is a spicy version of zuchini parmasan..

Ingredients



    ingredients:

    1 courgette( zuchini) or 2 small

    ( 1/2 cup or 1 cup) grated cheese can be low or high fat what you prefer

    olive oil spray

    1/2 tsp cayene pepper spice or fesh chopped hot pepper

    1/4 tsp paprika spice

    dash of curry spice

    dash of nutmeg

    dash of cajun spice(optional)

    black or white pepper

    salt (optional)


    1 Sweet potato (1 cup)

    2 Plum tomato's

    1 clove garlic

    extra virgin olive oil

    win or cider vinegar
    directions:

    1. heat oven between 360 & 400

    2. slice the courgettes(zucchini) how you prefer
    in rounds or in length
    I slice them quite thick as i like a crunch..

    3. spray olive in in a low oven dish

    4. arrange the courgettes (zuchini) in a low oven dish

    5. sprinkle all the spices over plus salt & pepper

    6. throw 2/3 cheese over

    7. put in the heated oven
    I start at 360 & after 10 mintes go up to 400 for a
    further 10 mins
    open the oven sprinkle the rest of cheese and cook
    further at 475 to 500 for 4 mins until golden


Tips

I prefer 30 to 45 % low fat cheese, gives the zucchini that extra cooking fat..
I put more cayenne on as i love spices.. chilli spice is also good or fresh hot pepper or jalopena peppers...

Tomato salad:..

cut tomato's in really small blokjes ,

1 clove of garlic chopped really small,

parsley chopped really small,

0.25 tsp extra virgin olive oil

0.25 tsp of wine or cider vinegar,

salt & black pepper (optional)
mmmmmmm delice.. enjoy...
