Chia Seed Pudding

Ingredients

    1 Cup raw cashews
    4 cups water
    1 tbsp cinnamon
    1 vanilla bean, seeds scraped
    1/2 cup chia seeds
    7 dates, pitted
    4 tbsp vanilla extract

Directions

-Soak cashews in water. Drain and rinse well.
-Put cashews and all remaining ingredients except chia seeds in a blender. Add the water and blend until everything is smooth.
-Pour the blended mix over the chia seeds and whisk.
-Leave in the fridge to chill for an hour or so.
-Serve with fruit.
