Introduction

a diet friendly vegan version of eggplant parm a diet friendly vegan version of eggplant parm

Ingredients

    1 large eggplant peeled
    1 large pepper diced
    1 large onion diced
    3 garlice cloves pressed
    1 hot chili pepper diced
    rosemary to taste
    cilantro to taste
    2 cups tomato sauce (fat free low sodium)

Directions

take the peeled eggplant and cut longways into thin wide strips
bake in the oven at 350 on a greased baking baking pan (i used pam) for 20 minutes or until soft.
while this is cooking sautee the remaining ingridients (no oil) until tender
take each piece of eggplant and add a small scoop of the mixture to the center and roll up.
place all the eggplant rolls into a baking dish (a few inches deep) and pour 2 cups of tomato sauce over and bake at 350 for 30 more minutes. this makes 2 servings
