Irish Potatoes colcannon

Number of Servings: 8

Ingredients

    2 lbs potatoes
    7 cups cabbage
    1 cup chicken stock low sodium/fat free
    1/3 cup low fat butter
    2 slices bacon
    3/4 tsp salt
    1/4 tsp pepper
    dash of mase

Directions

Cook potatoes until tender and mash.
cook bacon in skillet until evenly brown, drain(reserve 1 tbl sp to cook cabbage and onion), crumble set aside. In same skillet cook cabbage and onion until soft.
fold ingedients into mashed potatoes.

Serving Size: makes 8 servings 1-1/4 cup each
