Hearty (and hearty healthy) vegetable quinoa

Ingredients

    1 C quinoa (dry)
    2 C vegetable broth

    1 tsp olive oil
    2 zucchini, sliced
    1 C diced onions
    1 C chopped cabbage
    1 C chopped cauliflower
    4 oz. reduced fat feta cheese
    2 C sliced cherry tomatoes

Tips

Double the batch and enjoy as leftovers for lunch, and dinner, and more lunch...also great at a pot luck! Add any veggies you like (other variations include roasted red pepper, kalamata olives, and artichoke hearts). Also very delicious as a cold dish. You can even add salad dressing (vinaigrette, or the like) to add even more flavors. Very versatile dish.


Directions

Bring vegetable broth and rinsed quinoa to a boil. Cook until desired texture (approx 15 mins). Set aside.

Heat olive oil in saucepan. Satue onions, cabbage, cauliflower, and zucchini until vegetables are to desired tenderness.

Add veggies to cooked quinoa and mix. Add tomatoes and feta and mix gently. Serve immediatley (feta will tend to melt slightly with the warm quinoa and veggies).

ENJOY!

Serving Size: Makes 4 servings (1 C quinoa + equal servings of vegetable mix + 1 oz of feta)
