Black Bean Salad (6-7 servings)

Introduction

Number of Servings: 7

Ingredients

    3 medium pepper--your choice/mix of red/green/yellow/orange
    1/2 cup diced red onion
    1 can (15.5oz) corn, drained
    1 clove garlic, minced
    1 tbsp cilantro
    1/4 cup olive oil
    4-5 tbsp basalmic vinegar
    1 tbsp lime juice
    1 can (15oz) Bush's reduced sodium Black Beans, drained
    lettuce and tortilla chips (optional)

Directions

Cut peppers and onions into 1/4" cubes. In sala bowl, combine peppers, onions, corn kernels (drained), garlic and cilantro and toss to ix. Add olive oil, vinegar, lime juice (salt and pepper to taste--didn't find it necessary to add) and toss again. Add black beans and mix well. Can serve over bed of lettuce with tortilla chips.

Serving Size: makes 6-7 servimgs
